Vegetable dishes from l'Oustau de Baumanière

Why a cookbook exclusively consitituted of vegetable recipes ? In 1985, I had a fabulous trip to India, where I discovered the diversity and the variety of its vegetarian cuisine. Leaving a table after eating no fish or meat without feelinf ravenous opened up entirely new horizons for me. This is how we have come to bring on the "carte" set menus prepared with vegetables we gather and cook on the very same day. This book is the result of our work these last few years.
