The AOC Provence is a variety of olive oil produced by the Oil Mill of Barbentane Ollier. This oil benefits from the Protected Designation of Origin (PDO), which means that it is of very good quality.

AOC or PDO Provence olive oil

AOC Provence olive oil is an organic virgin or extra virgin oil that has a particular taste. It has a fine texture, is not greasy and has beautiful aromas. When you open a bottle or can of AOC Provence olive oil, you will smell pleasant odors. You can distinguish aromas of arugula, almond leaves and tomatoes.

This extra virgin olive oil is also delicious and will enhance your dishes wonderfully. You can for example use it in your vegetable or fruit salads, your mashed potatoes... You can also put the olive oil PDO Provence in your hot preparations. It holds up well to heat and can therefore be used in all types of cooking. Our extra virgin olive oil is available in a 1 liter bottle and other cans of various capacities. You will find 25 cl, 3 liters, 5 liters...

The production of PDO Provence olive oil

The taste and texture of the PDO Provence olive oil of our mill are obtained thanks to the varieties of olives used for the production. You have the Salonenque, the Aglandau, the Bouteillan, the Picholine and the Grossane. These varieties of olives are harvested when they start to turn yellow. In addition, the fruit is grown on clay and sandy soils that drain water well.

This allows the olive trees to absorb the nutrients in the soil and produce excellent quality olives. This is what gives the AOC Provence olive oil from the Barbentane oil mill its delicious taste. After harvesting, the olives are subjected to an extraction process that requires a certain know-how and experience. Among the different steps of this process, there is the maturation which is specific to the terroir. This small detail is important, because it allows to have an authentic PDO Provence olive oil.

Production of PDO Provence olive oil

The virgin olive oil of Provence, a certified PDO oil PDO Provence olive oil obtained the Protected Designation of Origin (PDO) at the end of February 2020, even though it had existed for decades. This label recognizes the know-how, specificities and originality of Provence in the production of olive oil. The obtaining of the PDO label by the virgin olive oil of Provence was obtained thanks to work and determination.

The application for the appellation was submitted in 1997, but it was not until 2006 that the first step was taken. The National Committee of the INAO met and voted for the olive oil of Provence to obtain the Appellation d'Origine Contrôlée (AOC). A sign that protects the name of the virgin olive oil of Provence in all France. It was not until 13 years later that the PDO recognition of this particular product of Provence was effective. This sign of identification of origin and quality protects the olive oil of Provence throughout the European Union.
